Zesty Lime Shrimp and Avocado Salad

Zesty lime juice and cilantro are the key ingredients to creating this light and refreshing salad, no heavy mayonnaise to weigh it down.   • 1 lbs Jumbo Cooked Shrimp
  • 1 Medium Tomato
  • 2 Medium Haas Avocado
  • 1/4 Medium Red Onion
  • 1 1/2 Medium Limes
  • 1 tablespoon Olive Oil
  • 1 tablespoon Cilantro
  • 1 pinch Salt & Pepper
  1. In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper.
  2. Let them marinate at least 5 minutes to mellow the flavor of the onion. In a large bowl combine chopped shrimp, avocado, tomato.
  3. Combine all the ingredients together, add cilantro and gently toss.
  4. Adjust salt and pepper to taste..
